The buttery cheese is balanced with the yeast culture Geotrichum, which gives a crispy, thin, white mold surface. The basic idea behind the cheese: With Den Hvide Dame, we wanted to investigate the properties of high fat contents. The result was a cheese with an excellent balance between fat and acid.
