
Arla Unika Den Hvide Dame
We make Den Hvide Dame at Troldhede Dairy, where there is a proud tradition of blue cheese. In Den HvideDame, we have tripled the milk's natural fat content of cream. This raises the cheese to 75+, a dairy technical expression for the proportion of fat in dry curd. In the finished cheese, this means a fat content of just under 50%. The buttery cheese is balanced with the yeast culture Geotrichum, which gives a crispy, thin, white mold surface. The basic idea behind the cheese: With Den Hvide Dame, we wanted to investigate the properties of high fat contents. The result was a cheese with an excellent balance between fat and acid.
