1. Bouillon & Fond – The Backbone of Flavor
Our range of bouillons and fonds deliver deep, natural flavor in seconds. Made from fermented vegetables and herbs, they add structure and soul to soups, sauces, stews, grains, and plant-based proteins.
Just 20 grams per liter is enough to create a full-bodied broth with clean, rounded taste – ideal for mise en place or finishing. The range includes:
Vegetables – a classic all-round base
Ocean’Ish – built on fermented herbs, perfect for light and fresh seafood-style broths
Chicken’Ish – inspired by slow-cooked poultry
Beef’Ish – a deep and roasted alternative to veal stock
All variants are available in 40g and 400g formats with multi-language labeling.

Frank Lantz, founder of Uhhmami and a Michelin Chef, created the brand to solve a challenge he saw across kitchens: how do we cook with deep flavor and sustainability at the same time?
By using fermentation and culinary science, he built a toolbox that brings out the best in vegetables – unlocking savory, roasted, umami-packed taste without shortcuts. All products are crafted in Denmark using selected ingredients and minimal processing.

Uhhmami Bacon’Ish
Flavor – Crispy smokiness and saltiness reminiscent of bacon – yet 100% plant-based. Use in soups, on baked potatoes, in bean dishes or as a crunchy salad topper.

Uhhmami Chee’Ish
Uhhmami Chee’Ish Flavor – The taste of aged cheese – without dairy. A fermented flavor booster packed with umami, saltiness, and roundness. Use 1–2% of total dish weight. Perfect for risotto, soups, gratins or pesto.

Uhhmami Blue Chee’Ish
Uhhmami Blue Chee’Ish Flavor – The taste of blue cheese – plant-based. Intense, nutty, and slightly tangy. Ideal for dressings, dips, mushroom toast or as a pizza topping.

Uhhmami Truffle’Ish
Uhhmami Truffle’Ish Flavor – Truffle flavor with umami and mushrooms – nothing artificial. Elegant and aromatic. Excellent for risotto, mushroom dishes, pasta or gourmet snacks.

Uhhmami Beef’Ish
Uhhmami Beef’Ish Bouillon – A rich, robust stock reminiscent of classic beef broth – but entirely plant-based. Ideal for sauces, lentil stews, bean dishes or vegan “beef stew”.

Uhhmami Chicken’Ish
Uhhmami Chicken’Ish Bouillon – Chicken taste – without chicken. A smooth, mild stock with roasted vegetables and spices. Use in stews, bulgur, pasta water or plant-based ramen.

Uhhmami Vegetables Bouillon – A clean, deep and natural vegetable stock made from fermented vegetables. Adds body and balance to soups, sauces, and plant-based dishes. Easy to use, high concentration – just 20 g per liter of water. Ideal for vegetable soups, lentils, risotto or as a base for sauces.
